Planked Spicy Lime Chicken

Ingredients:

    • 4 boneless chicken thighs
    • 1 cedar plank, soaked for 30 minutes
    • 1/2 lime, squeezed

    Spice Rub

    • 1/2 tsp. salt
    • 1/2 tsp. freshly ground black pepper
    • 1/4 tsp. chili powder
    • 1/4 tsp. paprika
    • 1/8 tsp. garlic powder
    • 1/8 tsp. onion powder

    Sauce

    • 2 tbsp. butter
    • 1 tbsp. olive oil
    • 1 small onion, sliced
    • 1 clove garlic, grated
    • 1 lime, juiced
    • 1/2 cup of chicken stock
    • 1/4 cup frozen peas
    • 1 tsp. cornstarch mixed with 1 tsp. chicken stock

Seeking something different the other night, I found myself looking for a way to use the lime I had and some chicken thighs that I pulled out of the freezer. Planked Spicy Lime Chicken just kind of happened and it turned out to be very delicious. Smoky paprika and chili powder combine with the smoke from the cedar plank to create a sweet taste that is balanced out by the juicy lime sauce.

Planked Spicy Lime Chicken

Serves: 2       Total Time: 60 Minutes

Ingredients

  • 4 boneless chicken thighs
  • 1 cedar plank, soaked for 30 minutes
  • 1/2 lime, squeezed

Spice Rub

  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1/4 tsp. chili powder
  • 1/4 tsp. paprika
  • 1/8 tsp. garlic powder
  • 1/8 tsp. onion powder

Sauce

  • 2 tbsp. butter
  • 1 tbsp. olive oil
  • 1 small onion, sliced
  • 1 clove garlic, grated
  • 1 lime, juiced
  • 1/2 cup of chicken stock
  • 1/4 cup frozen peas
  • 1 tsp. cornstarch mixed with 1 tsp. chicken stock

Directions

Step 1
Preheat your grill to 375°F, prepare for indirect grilling. Soak your cedar plank for at least 30 minutes.
Step 2
While your plank is soaking, combine the salt, black pepper, chili powder, paprika, garlic powder, and onion powder. Rub the chicken thighs on both sides with the spice mix.
Step 3
Place the thighs onto the plank then squeeze half of a lime over top.
Step 4
Place the plank onto the grill over indirect heat and plank bake the chicken for 30 minutes.
Step 5
As the chicken thighs are getting all plankin' delicious, make the sauce. In a sauce pan, over medium heat, melt the butter and oil together. Add the garlic and onion and cook until they're tender. Add the lime juice, chicken stock and peas, simmering for a few minutes. Add a little of the cornstarch mixture, whisking it in completely before adding more, and cook until the correct thickness. You may not need all of the cornstarch mixture.
Step 6
Serve the chicken thighs over a bed of rice with a drizzle of the sauce on top.
Planked Spicy Lime Chicken was very tasty and got the nod of approval from the Baron of Baking. I will definitely be making this again, for more than just the two of us.
