Bacon Wrapped Pineapple Rings

With Brown Sugar Sriracha Baste

Bacon Wrapped Pineapple Rings
Serves 6

Ingredients:

    • 1 pineapple, sliced into rings and cored
    • 2 packages of thick cut bacon
    • 1/4 cup sriracha
    • 1/4 cup of honey
    • 1/4 cup of brown sugar
    • 1/2 a lime, juiced
    • 2 tbsp. soy sauce
    • 1 tsp Bone Dust
    • 2 tbsp. oil

Nothing's better than bacon. Well, there's chocolate, that's really good, and butter, and garlic, garlic-butter... okay there are several things AS GOOD AS bacon. But when you wrap things IN bacon, well, you're upping the game to the next level of delicious. This recipe for Bacon Wrapped Pineapple Rings  With Sriracha And Brown Sugar Baste are bacon-y and sweet, and spicy, and all around YUMMY. 

Grill the pineapple for 10 mins per side

Brush the pineapple with the sriracha

Serve with reserved baste

Bacon Wrapped Pineapple Rings

Serves: 6       Total Time: 35 Minutes

Ingredients

  • 1 pineapple, sliced into rings and cored
  • 2 packages of thick cut bacon
  • 1/4 cup sriracha
  • 1/4 cup of honey
  • 1/4 cup of brown sugar
  • 1/2 a lime, juiced
  • 2 tbsp. soy sauce
  • 1 tsp Bone Dust
  • 2 tbsp. oil

Directions

Step 1
Preheat the grill to 400°F, preparing for indirect grilling.
Step 2
Wrap each of the rings of pineapple in bacon, it can take as many as five slices to cover one pineapple slice.
Step 3
Oil the grids thoroughly, and grill the pineapple over indirect heat for about 10 minutes per side. Save a little baste for dipping before brushing the pineapple with the Sriracha and brown sugar baste. Be very careful when you flip them.
Step 4
Serve hot with the reserved baste.

Tailgate food is easy when you use the Napoleon TravelQ™, I call him Larry, you can just show up, set up and grill up! That's what I did with these pineapple rings. Boy howdy were they tasty. You have to be careful though, the acid from the pineapple weakens the bacon and it can disintegrate when you grill them. That's why I said, oil the grids well and be gentle when you flip them.
