Peanut Butter Barbecue Sauce

Peanut Butter Barbecue Sauce

Ingredients:

    • 2 lbs. chicken legs, skin on, 8 pcs. 
    • salt and pepper to taste
    • 1 tbsp. herb and garlic spice
    • 2 tbsp. oil

    Sauce

    • 2 tbsp. olive oil, divided
    • 1/2 an onion, minced
    • 4 cloves of garlic, minced
    • 3 cups of crushed tomatoes (purée)
    • 1/3 cup balsamic vinegar
    • 1/2 cup black strap molasses
    • 1/4 cup brown sugar
    • 1/3 cup of peanut butter
    • 2 thai finger chilies, minced
    • 1/4 cup water
    • salt and pepper to taste

Happy National Peanut Day everyone. Well actually it's September 13th... BUT I had to celebrate and share with you! Instead of doing something Thai with a peanut sauce, or a delightful dessert, I opted to do something slightly unexpected. I made a peanut butter laced barbecue sauce. Was it ever delicious! Creamy. Slightly spicy, and definitely a little sweet. You gotta try this on your next meal with chicken.

Peanut Butter Barbecue Sauce

Serves: 4       Total Time: 40 Minutes

Ingredients

  • 2 lbs. chicken legs, skin on, 8 pcs. 
  • salt and pepper to taste
  • 1 tbsp. herb and garlic spice
  • 2 tbsp. oil

Sauce

  • 2 tbsp. olive oil, divided
  • 1/2 an onion, minced
  • 4 cloves of garlic, minced
  • 3 cups of crushed tomatoes (purée)
  • 1/3 cup balsamic vinegar
  • 1/2 cup black strap molasses
  • 1/4 cup brown sugar
  • 1/3 cup of peanut butter
  • 2 thai finger chilies, minced
  • 1/4 cup water
  • salt and pepper to taste

Directions

Step 1
Mince the onion and combine with 2 tbsp. of oil in a large saucepan. When I say large, I mean bigger than 4 cups, but less than 6 cups.
Step 2
Cook the onion and garlic over medium heat, until it's tender. Add the tomato, vinegar, molasses, sugar, peanut butter, water and chilies. Bring to a simmer for 15 minutes.
Step 3
While the sauce is simmering, preheat the grill to 450°F. Season the chicken legs with salt, pepper and garlic and herb seasoning. Toss them with the oil.
Step 4
Grill the chicken over direct heat for about 5 minutes, until they are starting to crisp up a little.
Step 5
Carefully pour the sauce into a blender, or use a stick blender to liquify the sauce.
Step 6
Baste the chicken until it is finished cooking, about 15 minutes, until an instant read thermometer reads 165°F.
Step 7
Serve the chicken with the extra sauce and your favorite vegetables like sweet potato and buttery green beans.

This is a good sauce. Next time I think I will add a little liquid smoke, or maybe I will smoke either the peanuts and make home made peanut butter, or smoke the tomatoes and make the purée. It just needs a little more of a hit of smoke. Otherwise an excellent sauce.
